Single vineyard, unfined, cellar-aged Cabernet Franc
A richly coloured dark red wine with raspberry, cherry, floral violet and vanilla essence aromas. Medium to full-bodied, intense red berry fruit, with raspberries,cherries, and floral nuances (violets. lavender) and hints of dark chocolate on a softly drying fine tannin finish. Great by itself or with starters (eg olives, foccacia and humus) and a perfect match with lamb, game and spicey Asian dishes.

2007 proved to be a very good season with plenty of dry spells, cool marine winds and very little rain before harvest.The vines were in their fifth year and produced exceptional fruit. The hand-picked grapes were gently destemmed and pressed before being fermented in open-top fermenters with hand plunging, After four rackings the wine was hand bottled on estate without fining. First release December 2009.
The grapes were grown at the home vineyard of Jurassic Ridge, Church Bay (Hangaura) on the West end of Waiheke Island in the Hauraki Gulf.
High quality chateau-selection vines originally sourced from Bordeaux and grafted onto phylloxera-resistant rootstock (101-14),hand-planted with close spacing and low fruiting wires for maximum warmth in our North facing block 80m above sea level, into well-drained iron-rich clay soils with volcanic ash and magnesium nodules, over deep clay and 155 million year old weathered-greywacke sedimentary basement. The vines were in their fourth year and cropped at 6t/ha. New Zealand Wine Growers Nil Residue Spray Programme (Designed to Comply with the NZ Wine Growers Export Wine Schedule).
The fruit was selectively hand-picked in the cool of the early morning, destemmed and lightly crushed within 30 minutes of harvesting and fermented in small batches in 900 L and 1500 L open-top fermenters with gentle hand plunging, followed by a 14 day maceration before the free-run wine was run to barrel. A small proportion of light press wine was included. Elevage with 30% new medium toast French oak. After four rackings the wine was bottled without fining. Released December 2009.
